These cookies are soft and packed with spices. They make me feel as though I am standing in my Nana’s kitchen at Christmas time. Adding Vitality oils to the ground spices really ramps up the flavor. And infusing the sugar with ginger oil before you roll the cookies in it is just incredible! This is a great way to incorporate an ancient grain into your holiday or everyday baking.

Super Spiced Ginger Cookies

1 cup Einkorn flour or whole wheat flour

1-1/4 cups unbleached white flour

1 tsp baking soda

2 tsp ground ginger

1 tsp ground cinnamon

1 tsp ground cloves

1/4 tsp iodized salt

1-1/2 sticks softened unsalted butter (6 oz)

1 cup white sugar

1 large egg

1/4 cup unsulphured molasses

2 drops each ginger, cinnamon, clove, nutmeg and black pepper Vitality oils

3-4 Tbsp  sugar & 3 drops Ginger Vitality oil


Preheat oven to 350F. Measure out dry ingredients onto a sheet of wax paper or parchment. Set aside.

In the bowl of a stand mixer beat together the butter and sugar until light and fluffy. Beat in the egg, the molasses and the Vitality oils. Add the dry ingredients to the molasses mixture and mix in at a low speed until all the dry ingredients are incorporated.

Place the additional sugar and ginger oil in a small bowl and whisk together to infuse the sugar. Then use a 1 oz scoop or 2 spoons to form 2 Tbsp of dough into a ball. This recipe should make 40 balls of dough. Toss the balls in the ginger sugar and place them on parchment lined baking sheets. Do not flatten the balls before baking.  Bake at 350 F. for 8-10 minutes. Let cool on baking sheets for 10 min. Transfer cookies to a rack to fully cool. Store in an airtight container to keep fresh.
